Has anyone heard of the LOW NITRATE Diet - it excludes, along with the cured meats, bacon etc., almost everything thought to be good for us: all vegetables, fish, nuts, legumes, and even garlic!!!
But nitrate itself is apparently not the culprit, and only leads to the formation of the carcinogenic nitrosomine under acidic conditions.
So perhaps the sole most important concern in diet and nutrition is PH, and maintaining an alkaline envirnment - thus, the Macrobiotic Diet???
