I have read the coconut oil miracles and I have read many things online about it. My understanding is that because of it's chemical makeup it doesn't turn rancid after cooking and is non-toxic to our bodies. For this reason it is safe to cook with. I don't cook with it all the time. Sometimes I will use it in soups and occasionally I will fry with it, like stir-fry or fried eggplant. Mostly I used it as butter, kinda. I will steam veggies and then put a couple teaspons of the oil on it for flavor or I will make some brown rice and then mix in a few teaspoons after cooking for flavor. I also eat it raw too. There was something that I read online about the chemical make-up allowing it to be heated...I'll see if I can find it again. I'll post the link if I find it. :)
