Fermenting your own Pro-biotics

Does anybody have any links or knowledge regarding this process?

How can I grow my own cultures in order to cut down on costs, learn something about biology and improve my health? If I/we can grow our own pro-biotics at home we can guarantee large doses everytime.

Also, does anybody know how many friendly bacterias will be produced by 24 hours fermenting milk ? Goats milk or cows milk best for yogurt?

Apprently 24 hours of fermenting will eliminate nearly all the lactose so we can essentially eat as much as we can bear by the sounds of it.
