I live in California, so the only state where you can legally purchase raw milk in stores. Claravale is the best brand qualitywise, jersey cows, small dairy. In some other states, you can work directly w/dairy farmers and purchase cow/goat shares. Depends how motivated a person is to get the raw milk because it definitely requires some extra effort outside of CA. Also the Weston Price Foundation is a great resource for obtaining raw dairy products.

Can you share more re: wrong temperature = wrong bacteria? Aajonus doesn't give any specific temperature control & neither do they monitor this in India--tho' the temperature is so warm in the south it's not an issue. Also in Klaus Kaufmann's book on kefir, he says no specific temperature is actually required for kefir either although it seems to work best when starting w/75-80F.
