Well, pre-soak your beans, seeds and nuts and make almond milk, etc. so the veggie protein become easier to digest. If I were in your place, I would have a hearty protein meal every day. Just avoid rice and such, it's a silent carb killer and constipator..!
Personally I feel an increasing touch of well-being when consuming hardly any grains or beans at all. I stick to quinoa and the occational apple or kichadi with rice. This way I can progress on the diet, making me ready for all the heavy cleansing later on, and enjoy myself.
