Cornflour may be taken but in smaller quantities on a few occasions since it's about 70 in the glycemic scale, buckwheat is 50 so it may be slightly more beneficial.
If i eat crackers made by corn i eat them in moderate amounts when leaving out brown rice or buckwheat porridge from the diet for the occasion so that the gut doesn't become too acidic.
