Good to hear, i came to think of one thing, as said i'm not an expert at diabetes but what if you threw off the cooked grains and stuffed up with more medium-glycemic vegetables like bell peppers, carrots and tomatoes (moderately) to heighten the GI a bit since vegetables contain about 60% less carbs per weight-unit than say brown rice and you can eat more of it to fill up carb intake if needed making way for a green apple now and then?

Eating most vegetables raw, cooking a minor vegetable soup to accomplish the meat and add some fiber (potatotfiber or alike) to that so the bowels run smooth.
Occasionally throw in some grains.

Yet again i don't know so much and if you've already tried that but what do you say?
Tinned sardines in oil are perfect for filling up the protein-quota now and then.
