Yes, I think you're right. Rubbing the cinnamon stick on the grater apparently rubbed off enough electrons to ionize the pieces enough to make them act like iron fillings in a magnetic field. I suspect that a metal measuring spoon would not have allowed them to stand up, because it would have grounded them electrically. I'm not a great authority on the subject though.
