I've made some small batches of sauercraut. 5 0r 6 days - done while still has green, before the brown sets in - pickle flavor to it - couple times have thrown it in with tuna egg salad in place of pickle relish. Cultured foods are acid forming (PH) so some moderation of consumption may be good. I feel getting real alkaline may make a big difference (moreless PH drink, kelp etc)
