I hear you, there have been various times what I completely eliminated salt from my diet. Anytime I would inadvertently eat something with salt it felt like somebody had just dump a shaker full of salt into my mouth

I have heard the same complaints you have about Italy. A friend of mine complained that all they eat is white pasta and cheese

I think you have to get out into the country, talk to the people, visit some farmers markets, buy some produce right off the land. I am sure there is good food there you just got to hunt around

Sounds like an adventure whishsent I was there
