I've been occasionally using Almond "cheese" - it does have a little milk protein in it. It comes in a couple flavors (I like the mozarella the best), garlic herb, cheddar style, jalapeno jack, etc. It's surprisingly REALLY good, cheap (I've found a square brick of it for 2.65), and the mozarella melts stringy just like the real thing. It's easier to digest (at least for me), and it's low carb. I've tried soy cheese and rice cheese (disgusting), so I was really surprised that this stuff was so good. BTW, I am doing the Body Ecology Diet (with a few questionable inclusions like the almond cheese and the occasional rice cake), which does allow small amounts of redskin potatoes and corn, also millet, quinoa, amaranth & buckwwheat, but the big difference is you eat a lot of lacto-fermented veggies and Kefir if you can tolerate it, and THAT seems to be the key. Those fermented foods are amazing, and being able to use raw apple cider vinegar allows me to make good salad dressings again. Try the cheese, though. Seriously- it's good, and you almost can't tell the difference.
