Just a word to the wise about fish. ASK your source if what he is giving you is farmed or wild stock. If he doesn't know, find another source who does! If it doesn't say wild, be suspicious.
Farm fish are full of parasites (internal and external), heavy metals, hormones, pesticides, Antibiotics , and PCB's. They even feed the fish dyes to improve the color of their flesh, otherwise it would be a sickly, unappetizing grey!
Currently, your fish seller does not have to post where his fish came from. In North America, only Alaska has banned farm fishing, so it is the only guaranteed source of wild-harvested fish from that continent that I know of. Canada, Mexico, and the other States allow this destructive and unhealthy practice.
