ALS is a nerve deneration disease and has been linked with high glutamate levels. glutamate is a naturally occuring amino acid and nuerotransmitter that can become toxic if levels are too high. glutamate opens the cell wall to pass a message from one cell to another, however when glutamate levels are too high, the cell wall stays open for far too long which causes calcium to flood the cell and the cell may then die.
there are two ways to avoid glutamate toxicity - first eliminate ALL forms of MSG, the second is to cut way back on all foods high in glutamate. Mono-Sodium-Glutamat (Natrium Glutamat) is mono sodium glutamate, and is the MOST toxic form of glutamate out there. for someone dealing with ALS all forms of Mono-Sodium-Glutamat (Natrium Glutamat) are HIGHLY toxic and should be avoided at all costs. when you read the labels you have to look for not just MSG, but also all the other names Mono-Sodium-Glutamat (Natrium Glutamat) goes by such as "hydrolized vegetable protein" and many other names.

aspartic acid is another thing to avoid. this is found in aspartame, the artificial sweetner. it has similar effects that glutamic acid does.
foods naturally high in glutamates are all types of beans. i would eliminate all beans, which includes peanuts and peanut butter. there is a link at the bottom of this post which describes a glutamate/aspartate restricted diet.
N-acetyl cysteine (NAC) is a critical nutrient to take. NAC has been shown to boost the level of glutathione in the body. glutathione plays a key role in normalizing glutamate levels, so its critical you get plenty of NAC.
as far as dietary nutrition goes, the key here is omega 3's. get a good quality cod liver oil like "garden of life" brand. the omega 3's are what the body needs to maintain and repair nerves. freshly ground flax seed, and flax oil should also be taken regularly.
carnitine is what the body needs to utilize omega 3 fatty acids, so this would also be an excellent supplement to take.
Alpha lipoic Acid has been shown to greatly reduce the onset of ALS in laboratory rats. go here for more info.
