We are at the mercy of labels. But if someone gets it analyzed and it is wrong, then they can be sued. My guess is that it is sugars from the fig. With apricots when there is no SO2, they look brown and ugly but taste great. When it is added, the apricots are a bright orange but taste bad. So it may be more to look better than to preserve them. When was the last time you heard of raisins, figs or dried fruit going bad?
