I had a pretty good day today. First, I checked my cod ceviche and found it had come out very nicely. I marinated the cod for a far shorter amount of time than the tilapia - maybe that helped, or maybe cod is just better than tilapia for marinating ("Plantation Chick" suggests I try kingfish- I'll have to look into that, as I've never seen it at the stores).
Second, I did my deep breathing exercise during my commute to work (and also back home). This is great for staying calm in heavy traffic, and hopefully is paving the way for me to get back into my meditation practice.
Third, on the way home I bought some raw almonds (thanks for the suggestion, Dawn). Almonds are supposed to be very good for you, but I have been avoiding them because I never liked them. I'm glad I gave them another try because they are reminiscent of the cashews I love so much; soft and slightly sweet. I wonder if that's because they are raw. Are roasted almonds harder and more bitter? That's what I remember of them.
Lastly, I measured myself this week and can see that I have lost more than 35 inches overall since January 8th 2006. I weighed myself this morning and found that I've now lost 70 lbs!! I'll probably hover around this weight for the next couple of weeks- agonizing when you are so close to the next set of 10s! I really wish I were losing weight more quickly, but I'm not going to starve myself or exercise myself to death to do it. Good health and moderation are my mantras these days.

believe it or not, I don't like Roasted Almonds. I loooove raw almonds. Question: do you have to soak them before munching?

I don't think I've ever liked almonds, roasted or otherwise, until I started eating raw. Raw almonds are kind of soft and have a slight sweetness to them, reminiscent of cashews. You don't have to soak them before eating them, but if you want to make a raw recipe using blended almonds, it is recommended that you soak them for creamier results. I bought a large bag of raw almonds from Costco and store them in the fridge.

Gosh, I've been so confused about this: I know for sure you're supposed to soak grains but I read about soaking nuts and some recipes don't call for it. So we still get the benefits of enzymes whether or not nuts are soaked? I've sadly stopped eating Raw Almonds (one of my favorite treats and filler foods) because I was unclear about whether they need to be soaked.

Well, this is one of the problems I have with so many "experts" in the raw community. There are many opinions, some conflicting, making it hard for us to decide what is right/wrong/good/bad. I decided that if something worked for ME, I would do it, even if some guru says not to, and that if something doesn't work for me, I DON'T do it, regardless of what the experts say. The whole enzyme thing is a debate in the first place. Many say that plant enzymes are killed by stomach acids, so eating raw food is healthy, but not because of live plant enzymes. When you think about it, plants begin to die the moment they are plucked from their stems anyway. So what are we to believe? I say if you like the taste of raw almonds and they have no negative effect on you, eat 'em! If you prefer to soak them first, why not? I have a vegan friend who stores soaked almonds, but I never saw a reason to do that for myself. But I will soak them before blending them (if I remember!) because I don't like the graininess you get from unsoaked nuts. I don't worry about enzymes at all anymore- I enjoy raw produce that is as fresh as I can get it; regardless of the reasons, it is still the best food I've ever eaten. I'm having some raw almonds this morning, as a matter of fact. :-)
