Got enough of all my nutrients toda

I’m so happy! I did not wake up exhausted and headachy today.  I am also down a few pounds, finally matching what my nutritionist discovered last week. I think it’s her scale that is off, but as long as it’s predicting my future, I’m quite happy.  

I started my morning with a glass of water and fresh-squeezed lime juice, then made my breakfast: eggbeaters omelet filled with a little salsa I got from Whole Foods’ salad bar. On the side I had ¼ of an avocado and a “sprig” (or whatever you call it) of cute little champagne grapes. For my beverage I made a drink from the juice of one mango, one orange, and about ½ cup of coconut water from a young Thai coconut I bought yesterday. I even remembered to take my antioxidant and calcium pills.  My goal for breakfast was mainly to get protein in from the start of the day.

Lunch was a salad into which I added a couple of oz. of salmon and some more of the avocado. Again I was making sure I was getting protein.  Dinner was a mixture I created of warm brown rice that I’d made earlier in the week, 2 oz. of tofu, 3 oz of salmon, the rest of my avocado, and corn salsa.  My goal was to ensure that I got some grains; I didn’t really care whether the foods “went together” or not. I drank ginger tea with my last meal.

At the end of the day I saw that I’d barely made the minimum protein allotment of 60 grams which Sparkpeople suggests, so I had a cup of the cottage cheese that I still have in the fridge, along with some cherries to make the snack less boring.  I had water before going to bed.  In fact, I did pretty well with water throughout the day just by being more conscious of the need to stay hydrated. 

All in all, a good day!
