Fantastic news for our family! We eat cilantro almost daily, and it goes in every pot of soup, stew and salad.

Recipe for "Pique":

Juice of 3 to 5 good sized limes or lemons (1/2 cup)
1 teaspoon Sea Salt
1 pinch cayenne
1 bunch chopped Scallions
1 bunch cilantro washed, chopped fine cilantro
1 cup finely chopped tomato
1 small chopped very fine red or white onion
1 teaspoon hot sauce
1 teaspoon of finely chopped garlic
optional: add 1/2 tsp. of finely chopped jalapeño pepper

in small container pour lemon/lime juice
add Sea Salt & cayenne pepper
stir
add chopped onions & scallions first
add other ingredients
mix
let it sit for at least 5 minutes prior to serving
(add more lemon juice and Sea Salt if needed. Adjust quantities to taste.)

Serve with soups, over salad, with rice, drink it straight up! Delicious...
No kidding: This same recipe is great for Gazpacho, just add more tomatoes, a little olive oil and put in the blender until smooth.

Add cooked schrimp (or white fish) and Celery for a GREAT Ceviche. Yummm.
