    "Butter provides appreciable amounts of short- and medium-chain fatty acids, which support immune function, boost metabolism and have anti-microbial properties; that is, they fight against pathogenic microorganisms in the intestinal tract.

    How to Purchase Butter

    The BEST butter is raw butter from grass-fed cows, preferably organic. Next is pasteurized butter from grass-fed cows, followed by regular pasteurized butter from supermarkets. Even the latter two are still a much healthier choice than margarine or spreads.

    I've been importing about a dozen pounds a month of some of the finest grass-fed raw butter from "the Dairy state"! I am what you call a real "Butter Buddy"! I believe I was designed to thrive on butter and primarily for that reason I could never have become "a vegan"!

    Update: 8-12-'12 I am now using butter oil that is made from the very same high-quality butter that I was getting whole. My butter oil has a consistency that is more like Ghee than oil. I love it!

    Dr. Weston A. Price in his book said:

    "I have referred to the importance of a high vitamin butter for providing the fat-soluble activators to make possible the utilization of the minerals in the foods. In this connection, it is of interest that butter constitutes the principal source of these essential factors for many primitive groups throughout the world. In the high mountain and plateau district in northern India, and in Tibet, the inhabitants depend largely upon butter made from the milk of the musk ox and the sheep for these activators.

    The butter is eaten mixed with roasted cereals, is used in tea, and in a porridge made of tea, butter and roasted grains. In Sudan Egypt, I found considerable traffic in high vitamin butter which came from the higher lands a few miles from the Nile Basin. This was being exchanged for and used with varieties of millet grown in other districts. This butter, at the temperature of that area, which ranged from 90° to 110° Fahrenheit, was, of course, always in liquid form. Its brilliant orange color testified to the splendid pasture of the dairy animals. The people in Sudan, including the Arabs, had exceptionally fine teeth with exceedingly little tooth decay."

    Chef Rob has looked into an exceptional source of real butter from Iceland where their "climate and relative lack of pollution lead to healthier grass, on which the cows graze in the summer".[3]

    October, 28, 2011 Aajonus Vonderplanitz writes about a man who medical doctors had sent home to die:

    A friend gifted me with "The Taste Divine - Indian ... Cooking ..." and I just discovered that: "In India, butter is traditionally made from yogurt, not from cream." That inspired me to begin researching this and the link (Footnote 5) is the first positive result from my search.

    Grass-fed butter -

    When cows eat grass, they concentrate antioxidants into their dairy. The major antioxidant that is concentrated is a fat-soluble form of vitamin A called retinol. Retinol is especially important for healthy neurological function, immune coordination and vision.[9]

    Grass-fed butter is also a rich source of various beneficial vitamin E tocopherols and other carotenoid antioxidants. These all have a positive effect at reducing oxidative stress in the arterioles and reducing risk of heart disease.

    "Weston A. Price was perhaps the first scientist to identify the importance of what he called Activator X, a fat-soluble substance that he claimed was crucial for healthy tooth and bone development.

    Thanks to the work of the Weston A. Price Foundation, we now know that this elusive vitamin must be vitamin K2. Vitamin K2 is generally made in nature by the fermentation of bacteria; as such, it shows upin such foods as sauerkraut, natto and miso (fermented soy beans) and cheeses like aged gouda and brie. Vitamin K2 is also abundant in the concentrated butter oil from cows eating young, actively growing green grass, presumably made by fermentation in the guts of the cows. This butter oil was considered Dr. Price’s magic medicine, especially when he used it in conjunction with cod liver oil.

    Up til yesterday I was favoring German Butter as a good pasture-fed butter that can be purchased in some local markets however my local VONS kicked up the price a buck on German Butter and consequently I needed to do some price comparison and fortunately found unsalted Kerry Butter at a much better price and on top of that that butter has a deeper yellow color! A better butter at a better price makes this guy all the more happy!

    March 12, 2018 - Vessels for High-Vitamin Butter -

    The current stock of Kerrygold Pure Irish Butter has a nice deep color that I find exceeding that of "German Butter". Inside the Kerrygold packaging is a recipe for "DUBLINER CHEESE BISCUITS WITH SAGE AND WALNUTS"[14] that's presented as: "a wonderful baked dish and the perfect vessel for Kerrygold Butter". It may very well be however I'd recommend tweaking the recipe in accordance with Nourishing Traditions which would be a matter of allowing the dough to lightly ferment before baking.[15]
