Chop the celery up small, (any veggie or fruit) and dehydrate to the crisp stage. Put in your vitamix and make a powder of it. Store in glass bottles. Use anyway you want, smoothies, soups, casseroles. It's the only way I can sneak veggies in, as my hubby won't eat them very often. If you dehydrate below 105 degrees, they will retain the enzymes, so you have a raw food.

If you juice carrots, take the remaining pulp and dehydrate as above. 25# of carrots will yield enough pulp to make about a quart jar of powder.

It's time consuming, but satisfying work.
