Hi Roooth, Fuhrman goes into this in more detail in Eat for Health Book 2, Chapter 9, under the heading "Is salt good for you?". I have not had time to read it in full, there's quite a bit there but the next bit, "decrease salt, increase taste", he says that if you break your addiction to salt, you won't miss it, and you will find that food has more flavour not less. And yes, I have read somewhere exactly what you think, that people need so much water because they drink so much salt. He says to gradually lower the salt intake so you won't miss it, and add salt to a finished meal rather than into the cooking because you taste it more that way and need to add less. I don't add salt to anything now.
