The truth?
The truth is that Swayze was a real fighter and had a determined and positive attitude, but he put his faith in mainstream medicine which has a virtual zero success rate against pancreatic cancer, and the end result was sadly predictable.
Though Swayze told Walters ."One thing I'm not gonna do is chase staying alive. You spend so much time chasing staying alive, you won't live.", he obviously was chasing staying alive by following his doctor's advice to "starve his body" in order to "starve his cancer".
It is plain to see how his life and his famous smile turned ever downward as he stuck with the advice that ended up killing him (he did not die of cancer, but of wasting disease):

More chemo And still more
Patrick Swayze near the end - how very sad
Perhaps in the end, the sad loss of film icon Swayze can serve as a grim lesson about misplacing your hopes in therapies that attempt to burn out, cut out or poison out the symptoms of cancer and fail to address the root causes that enabled it to gain a foothold in the first place as well as address the vital importance of nourishing the body with all the items it needs to fight back against cancer.
While you may be able to kill or slow down the proliferation of a virus by starving the body, if the body is starved the cancer cells simply consume the body's cells, tissues and organs around them and they will mutate healthy cells and keep on multiplying.
Chemotherapy exacerbates the problem by not only damaging the immune system but also by indiscriminately killing and injuring healthy cells, causing diseased areas of the body which lead to additional disease and shut-down of various organs. Shut-down of the body (physical death) is the eventual result - and Swayze serves as a stark illustration.
No disrespect intended, but we simply have to progress out of the truly dark ages of modern cancer treatments and out of a system of medicine that manages illness for profit by treating symptoms instead of actually nourishing and healing.
