you are posing excellent questions to the "opposition" here.
It is very curious that hormone disruption along with protein metabolism, seems to be a VERY prevalent issue\problem in today's world due to the ever growing issues of endocrine and metabolic disrupting pollutants in today...
Hormones rely on minerals and enzymes (mineral bound proteins), at least in large part for their production and proper conversion and utilization.
There is a great deal of conflicting information out there today due to any number of factors... most notably, environmental influence. Thus a study in a China, or perhaps India will not translate directly, nor compare equally, to an identical study in South America.
A study based in Alaska will not compare directly to another based in the desert southwest.
In other words environmental variations, along with genetic variation (due to a migrant population that has not made necessary regional genetic adaptations yet), can skew or change study results dramatically.
So whatever references you are given in response, if you receive a response, should be scrutinized, assessed and adjusted for for the many variabilities.
That is, if the study took these factors all into account... which, for the most part, they never do.
