Cultured veggies / bacterias count


A few sources say the sauerkraut can be ready in 3 to 7 seven days, some others say it takes 3-4 weeks. I'm quite confused with all this.

I would really like to eat a ton of fermented veggies, to solve digestive problems. But if it takes 3-4 weeks to ferment, then I would need to prepare a ton in advance, using a ton of jars...

I've experimented a little, and after 5 days, it doesn't taste sour or tangy... I've seen a few bubbles rising though.


What I want is the best probiotic sauerkraut.
According to that link: http://www.splammo.net/foodapplmicro/applkraut.html , there is very little lactobacillus and mainly leuconostoc at least in the first 5 days. I've never heard of particular benefits associated with the leuconostoc species, though they are also lactic acid bacterias...

I can't find any precise information about what interest me, and I don't want to buy books... I don't want the best tasting sauerkraut, I want the most healthy one.
