Re: What about fats??
I think fats are essential. I don't know what our actual fat needs would be if we were raised on an actual proper diet. I know that I have a slight hypoglycemia from eating a processed diet in the past, but it has gotten much better since I've gone raw. MH said once that all needs for certian foods are from some sort deficincey caused from eating the wrong foods.
If you look at it from a science point of veiw:
A paragraph from
http://www.youngerthanyourage.com/13/diabetes.htm
Your body has two types of energy at its disposal: fat-like substances and sugar-like substances. Consuming too little fat de-stabilizes blood-sugar levels, which is what eventually can cause diabetes.
So, sugars don't cause fat, and consuming protein or sugars can only cause diabetes in the relative absence of fat, because you need that fat (fatty acids) to be able to deposit redundant blood-sugar glucose) into the fat-depots (as glycerol).
I know myself from experience, I have a hard time on a fast due to the constant flux of blood sugar. I have to drink my juices often and even then I have blood sugar problems, light headedness and such. If I add a little olive oil, I feel much better.
