A medium fast would be anywhere from 10 to 15 days, and a long fast would be anything after that, up to completion (the return of hunger): a consensus of opinion from fasting authorities.
Yes coconut oil is very good for you, so no problem there.

Meat is a good source of protein, but can be very difficult to digest because of its concentrated nature, and is therefore very taxing on the system: I think grass-fed beef would be an ideal choice.
Fish and organically-reared chicken would also be a good choice. The much maligned egg is also a good choice as it contains all of the essential amino acids and is therefore considered to be a complete protein.......so long as the source is from free-range and organically fed chickens.

Any whole grains are also a good source of protein, just so long as they are not adulterated or processed in anyway; although some people have an intolerance to wheat. I wouldn't believe what Dr Mercola has to say about grains, personally; even Natural Hygiene does not recommend grains either, so I go against the grain (pun intended) when it comes to eating them. Quinoa is also a good source, so nothing wrong with that.

In my view, you should be avoiding any food that is processed or adulterated and as near to nature and as fresh as possible. Cooking though will change the chemical composition of food to some degree with a loss of some nutrition (steam-cooking winter vegetables, with the minimum of water, is considered to be one of the best ways of conserving the goodness), but cooking doesn't have as much benefit as raw, although I'm not sure I could eat a baked potato in its raw state.........not really very appealing!!
