It sounds like an accumulated toxic reaction, to me. You can get that from not only food, but environmental stuff like cleaning agents or laundry soap, dish washing liquids, shampoos or body wash, etc. Start tracking that, and I'm guessing you'll find something you use regularly is the culprit. But it's taking repeated multiple exposures to get enough to cause the reaction. And since I just read, it haasn't happened recently, you might have started using something you'd stopped using so it might be easy to figure out. :)
