Re: It sounds like an accumulated toxic reaction
The carpets surely don't help, but have you had your appliances check for leaks? Drive a lot? Walk around by roads with lots of cars? Or worse yet, run by such roads?
And just because a label say organic or chemical-free doesn't mean they aren't just lying through their teeth, unfortunately, to try and get a piece of the 'health' action. Be suspicious of it all.
Try switching shampoos first, see if that helps. I think it's worse than other personal care products because some small amount tends to remain--touted as conditioning agents.
And try doing any exercise, walking even, away from those roads. It may be a combination of things accumulating and to which you are extra sensitive.
And of course lightening the load on your immune system by deparasiting (the eggs are everywhere and everyone has them) to allow your immune system to regain more function to help clear the toxins, would be helpful too. Just because they haven't gotten bad enough to manifest a disease yet (it takes a while), doesn't mean they aren't there.
I honestly don't think salt loading had much of anything to do with it, unless the salt itself is contaminated.
