I vaguely remember from many different readings that n'acetyl-glucosamine is related to the gluten lectin and to the candida yeast.
It is also interesting to notice that the Atkins diet, the Specific Carbohydrate Diet and probably some others restrict carbs, and particularly grains and legumes, the highest in lectins. D'Adamo believes that lectins are blood-group specific in their effects, and that some lectins can have beneficial effects.
